Creamy Millet Porridge With Vanilla and Citrus

Millet is a wonderful grain that is gluten-free and works well as a change to oats for porridge. Im always looking to change it up a little in the mornings and this is a simple and still healthy way to do it!

Ingredients

Serves 2

1 cup hulled millet

1 cup water

1 1/2 cup coconut milk ( Or my favourite is a coconut and almond milk blend)

1/2 teaspoon vanilla extract

1 -2 tablespoons maple syrup

2 tablespoons black sesame seeds

1 mandarin, grapefruit or orange

A handful of berries of your choice - we had these lovely blackberries from the markets!

Method

In a medium saucepan over low heat, place the millet, water, 1 cup of milk and vanilla and simmer, stirring occasionally until the liquid is mostly absorbed - around 10 - 15 minutes. The millet doest get as soft as oats but will be tender.

Mix in the maple syrup to taste.

Serve in 2 bowls, and top with extra milk, half the citrus fruit and berries in each bowl and 1 spoon of sesame seeds each.
