Classic Vegetable Soup

The classic vegetable soup. I almost didn’t add it because I wanted to put something fancy with clever herbs and exotic spices. Then I remembered that I cook this soup once a week and I DON’T get bored of it. It is one of the staples in our home because it brings me comfort and I don’t even have to think when I cook it.

So I realised I better add it up here for anyone who has not yet got a classic vegetable soup on rotation or to make when they have a cold and need some tender loving care!


1 tablespoon olive oil

2 garlic cloves, peeled and chopped finely

1 large brown onion, diced small

2 carrots diced small cubes

2 zucchini diced small

2-3 potatoes diced small

2 cabbage white leaves, diced

1/4 pumpkin, diced small

1 can chickpeas - or made from scratch!

1.5- 2 litres vegetable stock

1/2 teaspoon turmeric ( you won’t taste it but its great for immunity)

1 teaspoon salt

You can actually throw any vegetables in the soup - especially good if they are looking a little tired in the fridge and you don’t know what to do with them! Broccoli, cauliflower are great ones and I often use them ( we didn’t have any in the house today or they would have been in the soup!)

If you want to make it more hearty I often also throw in 1/2 cup of “SOUP MIX” legumes - you can find the mix in any supermarket OR even a handful of penne.

In a deep saucepan, put in the olive oil, onion and garlic, heat for 2 minutes.

Add the liquid stock, and everything else. Let simmer on low heat for twenty minutes.

Serve with pepper and salt to taste and some healthy bread and olive oil on the side.
