Tuscan Bean Soup
Another soup that reminds me of my Mum. Maybe it is the thyme or maybe it is the nourishing feeling these warming soups give me…. anyone else feel that? I am also loving that you can stick these easy soups into flasks for the lunch boxes for kids in winter! Easy and healthy and helps me have a break from the stock standard choices!
2 tablespoons olive oil
3 garlic cloves, chopped
2 leeks, chopped
4-5 potatoes, peeled and diced or roughly chopped
1 can cannelloni beans ( or made from scratch even better!)
1 litre of vegetable stock
4 big leaves of Tuscan kale roughly chopped
1 1/2 teaspoons of thyme, fresh or dried.
In a large saucepan, on medium heat, add the olive oil, garlic and leek. Cook for 3 minutes, letting the leek wilt, stirring now and then so not to burn.
Add the potatoes, beans, stock and thyme. Cook for 15 minutes. Add the kale for the last 5 minutes.
Serve hot with salt and pepper to taste.
