Summer Mix Salad


Simple and fresh. This is a perfect side salad for a summers day and a great way to up the five vegetables you want to include in your daily dose!


2 carrots, grated or shredded in a food processor 

½ white cabbage thin slices or shredded

6 spring onions, sliced

6 radishes, sliced thinly 

1 cup snow peas, sliced 

1 tablespoon poppy seeds

1/3 cup flatleaf parsley, chopped 

1/3 cup roasted hazelnuts, chopped 

Juice from one lemon 

¼ cup Olive or vegetable Oil 



Place all in a bowl and mix!
