Thai Laksa

These are my favourite flavours and staples in our kitchen. Coriander, mint, lime, tamari. Add to almost anything and you get instant freshness and taste! This is such a quick dish, light so good on summer nights, yet also warming, so can be great in winter too!!

Serves: 3/4


3 red chillies, seeded

4 spring onions, chopped

2 cm of chopped ginger

3  garlic cloves crushed

1-2 bunches coriander

2 large lemongrass stalks white part only chopped

1 TBSP coriander ground

2 tablespoons of tamari

1 handful of mint

1/4 cup of water


2 TBSP coconut oil

2 litres of veggie stock

1 tablespoon of coconut nectar

1 tin of coconut milk

4 Kaffir lime leaves

1 cup of snow peas

1 packet of kelp noodles

1 lime

Half a bunch of coriander to serve .

1. To make the paste put all the laksa paste ingredients in a processor and blitz for a few minutes until its as smooth as you will get.

2. Warm your pot and add coconut oil and the laksa paste for a few minutes. Then add the coconut milk, the veggie stock, lime leaves and tamari, cover and simmer for 10 minutes.

3. Then add the snow peas. I leave them until last as I like them crunchy and fresh.

4. Serve with kelp noodles, coriander and a squeeze fresh lime.
