You may never guess it but Italian food can be some of the best for plant-based. My friend messaged me when we spent a month in Italy to ask, "How is the pizza with no cheese and the pasta with no sauce?" Yes it was funny but actually home cooked Italian is full of vegetable options- and we were lucky enough to have a amazing Italian Mama come a cook traditional dishes for us and since I have been hooked. The best thing is they are often so simple-just add good quality olive oil and salt. AMAZING.
Chicory can be a slightly bitter, which I like personally. Here is one of my favourite dishes
2 bunches of chicory, cut and discard the last 1/3 of the stalk and the rest cut into roughly 2 inches.
4- 5 cloves of peeled garlic, chopped in quarters
1/2 red chilli, diced and deseeded
Steam the chicory for a couple of minutes.
In a deep fry pan heat some olive oil and add the chilli and garlic. Cook for 3-4 minutes then add the chicory and sauté together for a minute.
Dress with a little more olive oil and salt. Serve immediately.
