Chocolate Caramel Cookies
Im not a cookie person, however I have children and children like cookies. Who am I to deny them! While we don't have them often, these are a great healthy version of the chocolate cookie, that are easy to make and so you can get the little ones involved! As you can see the carmel sauce is perfect for little fingers getting in the bowl afterwards!
1 cup raw walnuts, soaked 4 hours
1 3/4 cup almond meal
1/4 cup raw cacao powder
1/4 cup of maple syrup
1 tsp vanilla extract
1/4 tsp sea salt
Raw caramel sauce….
1/4 cup Macadamia nuts, soaked 4 hours
6 Medjool dates, pitted and soaked at least 30 minutes
1/4 cup water
1/4 cup maple syrup
1/2 tsp vanilla extract
1.Heat oven to 180degree C
2.Drain and rinse the walnuts and place in a food processor with almond meal and cacao powder. Blend until well combined.
3.Add maple syrup, vanilla extract, and 1/4 tsp sea salt and blend again until a thick dough begins to form. Roll dough into balls about 1 heaping tablespoon big and flatten.
Cook for 11 minutes.
4.Make the carmel sauce by draining the nuts and dates, then adding all the ingredients into the blender until really smooth.
5.Remove the cookies from oven and put a dollop of carmel sauce on each.
