Asian Vegetables with Indonesian Tomato Sambal

I'm all about getting a variety of greens in your diet and this dish is a great way to do this by adding some asian vegetables you may not be used to consuming as often as our "standard" greens. The tomato samba is a fragrant sauce that makes it come alive, I was inspired by all the wonderful sambal additions you get with your meals when in Bali. YUM!!

Asian Vegetables

  • A few bunches of Asian Vegetables. I like chinese broccoli, bok choy and chop sum

  • 4 Lime leaves chopped finely

  • Handful of Fried shallots

  • 3 Tablespoons of Tamari

  • Dash of Sesame Oil

Tomato Sambal

  • 3 tomatos

  • Coconut oil

  • 6 garlic cloves

  • Half a cup of raw cashew nuts

  • 5 long red chillies seeded

  • Dash of tamari

  • Juice of 1/2 to 1 lime.

  • Blend all the ingredients for the tomato sambal in the blender, minus the oil.

  • Heat coconut oil and then add the tomato salsa mix it in a deep fry pan and heat for 5 minutes. It will decrease in size.

  • Top with fried shallots.

  • Steam the vegetables for a few minutes then mix in a bowl with lime leaves, shallots, oil and tamari

  • Serve hot with rice and sambal and what ever else takes your fancy.
