Asian Vegetables with Indonesian Tomato Sambal

I'm all about getting a variety of greens in your diet and this dish is a great way to do this by adding some asian vegetables you may not be used to consuming as often as our "standard" greens. The tomato samba is a fragrant sauce that makes it come alive, I was inspired by all the wonderful sambal additions you get with your meals when in Bali. YUM!!
Ingredients
Asian Vegetables
A few bunches of Asian Vegetables. I like chinese broccoli, bok choy and chop sum
4 Lime leaves chopped finely
Handful of Fried shallots
3 Tablespoons of Tamari
Dash of Sesame Oil
Tomato Sambal
3 tomatos
Coconut oil
6 garlic cloves
Half a cup of raw cashew nuts
5 long red chillies seeded
Dash of tamari
Juice of 1/2 to 1 lime.
Method
SAMBAL
Blend all the ingredients for the tomato sambal in the blender, minus the oil.
Heat coconut oil and then add the tomato salsa mix it in a deep fry pan and heat for 5 minutes. It will decrease in size.
Top with fried shallots.
VEGETABLES
Steam the vegetables for a few minutes then mix in a bowl with lime leaves, shallots, oil and tamari
Serve hot with rice and sambal and what ever else takes your fancy.
