Mexican Walnut Salad with Crumbled

Tracy has created a stunning play on the side-salad with this – which I think tastes so good it can be brilliant for a meal on its own on a summer’s day! The dressing is what makes it, so don’t miss that part! Enjoy with the rest of her Mexican feast xxx

Walnut Salad

2 cups cos lettuce
1/2 cup tomato, diced
1/2 cup avocado, diced
1/4 cup walnut crumble and top with the Vinaigrette ( see below for both)

Combine the cos, tomato and avocado. Toss with the viniagrette and top with the walnut crumble.

Serve along side of the tacos.

Walnut Crumble

1 cup walnuts
3/4 teaspoon cumin
1/2 teaspoon chilli powder
dash of chipotle powder (or smoked paprika for less heat)
handful of coriander, fresh
salt and pepper for seasoning
1/2 tablespoon water
juice of 1/2 a lime

Add all ingredients to a food processor and process lightly into a crumbly texture. If you go too far it could become nut butter!

Vinaigrette

1/4 cup avocado
1/8 cup lime juice
1 Tablespoon water
1/2 clove garlic
1/2 Tablespoon agave
1/2 teaspoon balsamic vinegar
1/8 teaspoon grated fresh ginger
1/8 teaspoon ground coriander
dash of child powder
dash of chipotle powder
couple sprigs of fresh coriander

Blend all together in a big speed blender or food processor. This is what makes the salad, so don’t miss it!! It is sooo good you can use it on other meals you make too!
