Cucumber Salad; Keeping It Fresh


My type of salad; super fresh. This one serves two and you can whip it up in minutes. Perfect as a side salad with something more hearty.


2 Lebanese cucumbers

2 corn on the cob, boiled and cut

1 jalapeño, thinly sliced

2-3 kaffir lime leaves, shredded

Half an avocado, diced

8-10 sprigs of fresh mint, leaves removed

Sauce –

Juice from 1-2 limes

1 teaspoon of freshly minced ginger

2 tablespoons of olive oil


Half the cucumbers and cut a small amount of the inside out, then slice on the diagonal. ( Just a fun way of cutting it to change it up!) In a bowl, combine all the ingredients.

Combine the dressing ingredients and dress the salad just before eating to keep it nice and crunchy.
