I love this salad as it is quick and so fresh!
Half a Cos Lettuce
Bunch of coriander
Half a bunch of mint
4 spring onions
1 carrot peeled slices
Handful of cherry tomatoes cut in half
Handful of bean sprouts ( sometime I use sunflower sprouts)
1 lebanese cucumber halved length ways and then sliced
3/4 cup of cashews
1/2 cup of coconut chips
1/4 cup of sesame oil
3 tablespoons of tamari or Braggs All Purpose Seasoning
Juice from 1 lime
Half a red chilli diced
Mix the ingredients of the dressing first, so the the oil can soak up the zing of the chilli. Then mix all the salad ingredients together and dress. Easy!
You can make this with rice noodles and mix them through if you want something more hearty.
